A authentical proces creating unique products

The caramelisation process is in itself quite simple and can be done in every kitchen, using a pan and stove. However, transferring that to an industrial scale with excellent quality and consistency is a challenge. Heating it just a little too long will burn it, heavy boiling must be avoided. Therefore, most producers of caramelised sugars and caramels choose to heat the sugars in a closed system, keeping moisture from evaporating and finally end up with a liquid product.

That is not the case in our production facility; we use an open vessel to caramelise the sugars, so that moisture and other volitatile components are evaporated. That naturally influences the caramelisation reactions taking place, providing our products with their unique taste and colour intensity.

 

The caramelisation process is closely monitored and controlled in time, measuring temperature and colour formation. As soon as the boiling sugar mass reaches it’s final quality, a valve is opened to empty the vessel on a cooling plate were the product is spread out into a thin layer. By cooling the product becomes slid, turning into a glassy state. That enables further breaking and grinding into a fin powder form. We deliver our product into various grades and in agglomerated form, depending on the type of application. Due to this authentical production method, no carrier materials nor additives are used, or additional drying steps need to be applied. Naturally that has a positive influence on cost in use.

 

The process in it’s current shape and principle is still equal to the one which mr, Herman Buisman started with in 1867. Artisanal combined with state of art control and quality systems. As an example, in 2011 we invested in a complete new downstream processing (grinding and packaging) of caramelised sugars.

 

Naturally we also supply our products in liquid form, produced in a different manner. In some cases we even dissolve our powders in water, just to get the typical taste and colour associated with this traditional process. Last but not least we pride ourselves on the capabilities to produce tailor made, customised products, such as emulsions, cream caramels, mocha and aromatic caramel syrups.
